Crossroads Kitchen Joins Resorts World Family This Spring

Resorts World Las Vegas hasn’t even been open for a year and it has already become the premiere place to visit. With a massive casino and entertainment venue, luxury accommodations and the kind of cuisine variety a foodie dreams of being so close together – RWLV is the vacationer and local’s dream come true. Now, the RWLV family is growing again, and a beloved Los Angeles dining destination is coming to Vegas: Crossroads Kitchen. Crossroads Kitchen first opened in LA in 2013 at the corner of Melrose and Sweetzer Avenue. With a Mediterranean-inspired menu and an elegant atmosphere, Crossroads quickly became the place to find the finest Vegan food in California. Now, that restaurant is leaving the cradle – headed to the first outpost outside of its home state. Acclaimed chef and world-renowned plant-based visionary Tal Ronnen is opening not just one restaurant at RWLV, but two: Crossroads and CB | Crossroads Burgers. CB is a new fast-casual concept sure to delight fans of the brand, serving up favorite dishes on the go. Both new RWLV dining destinations will open in late Spring 2022. 

As the name would imply, Crossroads Las Vegas brings together options for vegans, flexitarians, omnivores, meat lovers and more – which means everyone can find something to enjoy at the new RW restaurant. Chef Paul Zlatos takes the helm alongside Ronnen, bringing favorites such as Stuffed Zucchini Blossoms, Beet Tartare and house-made pastas such as the Tagliatelle Bolognese and Fettuccine and Truffles. In addition, specialty menu items will be added that embrace the unique vibe of Resorts World and the class of Crossroads.

Ronnen, founder of Crossroads Kitchen and author of New York Times bestseller, “The Conscious Cook,” is known the world over for his inventive approach to vegan, plant-based foods. 

Ronnen’s concept revolves around the idea that he wants people to enjoy the food they bite into and not focus on the fact that it’s plant-based. That’s why his restaurants eschew the “vegan” label; he doesn’t want people to be biased against that first bite before they even try it. Per Vegas Eater, “‘Good food should be good food,’ Ronnen says. ‘That’s why we never use the word ‘vegan’ on the menu.’”

While much of Ronnen’s acclaim comes from Crossroads and his excellent and innovative cooking, he gained some of his fame as the creator behind the 21-day vegan cleanse for media mogul Oprah Winfrey, catering for the wedding of Ellen DeGeneres and Portia de Rossi, as well as serving the first all-vegan dinner to US Senators. 

Ronnen took an 11-year-turn in Vegas creating plant-based menus at venues like Wynn Las Vegas before writing The Conscious Cook which rocketed to bestseller almost immediately in 2009, its pages full of creative meat-free dishes. 

Las Vegas Review-Journal shares, “‘Chef Paul Zlatos and I are thrilled to return to Las Vegas where we first met 11 years ago adding plant-based options to the Strip,’ said Chef Tal Ronnen. ‘My intention with CB |Crossroads Burgers is to create a space for accessible yet elevated plant-based cuisine within the lively atmosphere of Resort World Las Vegas.’”
