Resorts World Las Vegas Opens Crossroads Kitchen and CB | Crossroads Burgers in Time for Summer

The day has arrived and foodies in Las Vegas can finally indulge their fondest dreams: Crossroads Kitchen is open at Resorts World Las Vegas. CB | Crossroads Burgers has also opened, leaving two excellent options for fine food-lovers to check out the newest Resorts World cuisine family members.

Whether your fondest foodie dreams include the familiar industry-leading meat-free food or you have yet to try their innovate plant-based dining, the newest Resorts World dining options both bring their A-game, plus a menu of delectable dishes you'll be planning a return for before you even leave the restaurant.

Opening Day for Crossroads is Here

It's time to grab your friends and head to Resorts World to try Crossroads Kitchen and CB; opening day was May 28.

The new Crossroads Kitchen is a mirror to the Los Angeles-based OG, and opening alongside the newest location is CB – a fast casual concept that provides more plant-based options in the Crossroads spirit.

The Crossroads and Resorts World team shares in a statement, "Crossroads Kitchen offers guests its signature Mediterranean-inspired dishes in a convivial atmosphere as well as additional specialty menu items exclusive to the Las Vegas location including the Chestnut Foie Gras made with roasted chestnuts and served with a cabernet demi-glace, grilled sourdough, celery leaf, and grapes and Chips and Caviar, waffle chips served with a dollop of Kite Hill sour cream topped opulently with seaweed-based caviar. Off-menu items from the Los Angeles location such as Spaghetti and Meatballs made with Impossible Meatballs and Fettuccine Alfredo provide diners with nostalgic plant-based comfort food.

The 162-seat restaurant features the dark woods, deep red banquettes, dramatic lighting and music the Melrose institution is known for. Iconic photography from artist Neil Zlozower is displayed throughout. The restaurant will also feature bar seating and a private dining room for up to 20 people."

Chef Tal Ronnen adds, "Our expansion within Resorts World Las Vegas points to the evolving mainstream appeal of plant-based cuisine. When Crossroads Kitchen first opened in 2013, it was a rarity, the first upscale, entirely plant-based restaurant with a full bar. Now, with our new locations, I’m excited to continue shaping the perception of plant-based dining with Resorts World and serve delicious, refined food that appeals to vegans and flexitarians alike."

The History of Crossroads

Crossroads is a brand that everyone should be familiar with. When the opening was announced earlier this year, CELEB shared; "Maybe you're game to try something new but aren't familiar with the Crossroads brand. If that's the case, you're in for a treat as you discover the premiere experience in plant-based dining.

The first Crossroads Kitchen opened on the corner of Melrose and Sweetzer Ave in Los Angeles, 2013. With a Mediterranean-inspired menu and an elegant atmosphere, Crossroads quickly became the place to find the finest Vegan food in California.

CELEB explored this melding of Resorts World and Crossroads when it was announced last month; 'As the name would imply, Crossroads Las Vegas brings together options for vegans, flexitarians, omnivores, meat lovers and more – which means everyone can find something to enjoy at the new RW restaurant. Chef Paul Zlatos takes the helm alongside Ronnen, bringing favorites such as Stuffed Zucchini Blossoms, Beet Tartare and house-made pastas such as the Tagliatelle Bolognese and Fettuccine and Truffles. In addition, specialty menu items will be added that embrace the unique vibe of Resorts World and the class of Crossroads.'

The man behind the vision – Ronnen – is himself a leader in the innovative world of plant-based eating.

'Ronnen, founder of Crossroads Kitchen and author of New York Times bestseller, 'The Conscious Cook,' is known the world over for his inventive approach to vegan, plant-based foods.

Ronnen’s concept revolves around the idea that he wants people to enjoy the food they bite into and not focus on the fact that it’s plant-based. That’s why his restaurants eschew the 'vegan' label; he doesn’t want people to be biased against that first bite before they even try it. Per Vegas Eater, ' ‘Good food should be good food,’ Ronnen says. ‘That’s why we never use the word ‘vegan’ on the menu.’ '

While much of Ronnen’s acclaim comes from Crossroads and his excellent and innovative cooking, he gained some of his fame as the creator behind the 21-day vegan cleanse for media mogul Oprah Winfrey, catering for the wedding of Ellen DeGeneres and Portia de Rossi, as well as serving the first all-vegan dinner to US Senators.

Ronnen took an 11-year-turn in Vegas creating plant-based menus at venues like Wynn Las Vegas before writing The Conscious Cook which rocketed to bestseller almost immediately in 2009, its pages full of creative meat-free dishes.'
